Gutter is the term that refers to the spacing between the copies on the press sheet which is important to allow for bleeds and trimming. The key is the allow pages to shuffle option in the pages palette flyout menu. You can add a bleed later by going to file document setup but it can be fiddly as indesign will only apply your revised settings to the pages you currently have selected. To override bleed settings in the document setup dialog box uncheck use document bleed settings and enter values from 0 to 6 inches or equivalents for top bottom left and right for single sided documents or top bottom inside and outside for double sided documents with facing pages.

I need to split up facing page spreads so i can bleed into the gutter the spine without affecting the opposite page.
